Kohlrabi Soup with Prawns |

Kohlrabi, peeled and cubed |

Chicken stock |
1 qt. or more |

1. In medium stockpot, melt 2 Tbsp. butter; sauté onion until translucent. Add kohlrabi and 1 quart chicken stock; simmer until tender. Season with salt and pepper.
2. Transfer contents to blender; puree. Add cream and additional stock as necessary. Adjust seasonings.
3. Melt remaining butter in skillet; sauté prawns. Season with salt and pepper. Ladle soup into 8 bowls and garnish each with prawn and chives. |
