Kohlrabi Soup with Prawns

Butter, divided use 3 Tbsp.
Medium onion, diced 1
Kohlrabi, peeled and cubed 2 lbs.
Chicken stock 1 qt. or more
Salt and pepper to taste
Heavy cream 3/4 cup
Large prawns, peeled 8
Chives, chopped 1 Tbsp.
1. In medium stockpot, melt 2 Tbsp. butter; sauté onion until translucent. Add kohlrabi and 1 quart chicken stock; simmer until tender. Season with salt and pepper.

2. Transfer contents to blender; puree. Add cream and additional stock as necessary. Adjust seasonings.

3. Melt remaining butter in skillet; sauté prawns. Season with salt and pepper. Ladle soup into 8 bowls and garnish each with prawn and chives.
