Cuban Sandwich

Cuban Sandwich
Yield: 1 serving
Prepped Cuban sandwich (recipe follows) 1
Mayonnaise 2 Tbsp.
Shredded lettuce 4 oz.
Tomato slices 3
Dill pickle chips 6
Mustard 1 tsp.
Pickle spear 1
Coleslaw, prepared 4 oz.
1. Place prepped Cuban sandwich in microwave and heat to 145F, about 40 seconds.
2. Remove top piece of bread from heated sandwich. Using gloved hand, dress top half of bread in order with mayonnaise, lettuce, tomatoes and pickle chips. Spread mustard under meat on bottom half of bread.
3. Close sandwich tightly and transfer to 200F sandwich press. Cook until bread is very crisp, 3-4 minutes. Transfer sandwich to cutting board and cut in half on bias using serrated knife.
4. To serve, line basket with deli paper and place sandwich, cut sides out, in center. Place cole slaw at 9 o’clock and pickle spear at 3 o’clock.
Prepped Cuban Sandwich
Yield: 1 serving
8-in. section of Cuban loaf 1
Swiss cheese, 1/8-in. slices 2
Ham, 1/8-in. slices 5.5 oz.
Salami, 1/8-in. slices 3
1. Cut bread lengthwise into 2 equal halves. Place bottom half on clean, sanitized prep surface and place Swiss cheese to cover bottom evenly.
2. Arrange sliced ham evenly atop Swiss cheese. Place salami on top of ham, slightly shingled to cover length of bread. Place top piece of Cuban bread atop salami.
3. Wrap sandwich tightly with plastic wrap; label and date. Transfer to storage container and refrigerate.
