Buffalo Chicken Lettuce Wraps
Yield: 1 serving
Large romaine lettuce leaves 4
Grilled chicken breast, sliced 12 oz.
Buffalo sauce 3 oz.
Buffalo Veggie Mix (recipe follows) 8 oz.
Blue-cheese dressing 2 oz.
Drizzle chicken strips with buffalo sauce and toss thoroughly to coat. Place chicken, lettuce leaves, Buffalo Veggie Mix and dressing in separate bowls and serve.
Buffalo Veggie Mix
Yield: 12 oz.
Cucumber, seeded and diced 4 oz.
Celery, diced 4 oz.
Baby carrots, sliced 4 oz.
Toss vegetables together in medium bowl and reserve.
