FE&SBest In Class — in-sink-erator

Schoolcraft College, one of the nation’s most respected Culinary Arts programs, recently dedicated a new training facility that includes 11 kitchens, each equipped with an In-Sink-Erator food waste disposer and Aqua Saver system. 

Certified Master Chef Kevin Gawronski spent two years researching the products and equipment to be used in Schoolcraft College’s new training kitchens.  “Cleanliness is critical in the foodservice industry.  Food waste disposers make kitchens cleaner and more sanitary, so we make instruction on disposer use as much a part of our curriculum as how to use a mixer or sharpen knives.”  For the new facility, he insisted on an In-Sink-Erator disposer and Aqua Saver system at every workstation. 

Prior to the renovation, food waste was tossed in the trash, or carried, dripping, to a disposer-equipped sink—taking valuable time away from classroom training.  He estimates that the In-Sink-Erator disposers have reduced the amount of wet refuse by 66%. As a result, only one garbage pick-up is needed each week, instead of three.
